Flight Wine + Chocolate is rooted in the love of fine food, wine, and family. David’s wine education began with a winning bid at a charity function for a dinner at The Herbfarm in Woodinville. The multi course meal prominently featured Washington wines and showcased the wide variety of wines being produced in our state. David loved the wines so much he became a Washington Wine Ambassador and joined the DeLille Cellars tasting room staff in 2011.

Kevin’s wine education began in 2009, the same year he met David. Teaching at a music camp for adults at Whitman College in Walla Walla provided an opportunity to taste Washington wines and get some behind the scenes views into the wine making process, including a barrel tasting of Kerloo wines at Va Piano in 2009 that sparked a deep appreciation for the art of wine making. In that same year Kevin and David began to visit tasting rooms together in Washington, Oregon, and Idaho, building relationships with winemakers, and enjoying the fun and inclusive atmosphere that tasting rooms provide.

Bountiful holiday dinners at David’s cousin's home in Kirkland highlighted how fine food, wine, and family are all made better when enjoyed together. It was at one of these holiday dinners in 2016 that Kevin first made a few filled dark chocolates for dessert. He quickly became obsessed with the mysteries of chocolate, and discovered that there were many parallels between chocolate and wine making. Every variable matters; wind, water, soil, slope, and sun. The maker of both wine and chocolate must know how to finesse every step in order to make a worthwhile product. Respect for the farmer, the land they tend, as well as the raw materials they produce is paramount.

Kevin and David began to discuss how it might be possible to open a traditional wine tasting room that also offered a line of handmade dark chocolates. Why not feature some of Washington’s many wineries in one place (no trip to Woodinville required), while also offering handmade chocolates that would compliment the artistry of the wine? The name Flight seemed a natural fit for Washington, where businesses like Boeing and Alaska Airlines made their home. A business model started to form, incorporating airline terminology like First Class and Business Class Flights, and hearkening back to a time when air travel was special, and every guest felt appreciated.

Flight Wine + Chocolate’s aim is to showcase the beauty of wine and handmade chocolates in a comfortable and inviting setting. Although we won’t always have a specific pairing of wine with every chocolate, we will make suggestions, and we encourage playing with your food. Flight is a place where preconceived notions are left at the door and new discoveries are encouraged. Flight is ‘Your Neighborhood Getaway’!
